Hey Julie! Those initial 3 chains count as one sc and 1 chain space! If you look at the Granite Cape blog post, you can see a swatch I did with 15 stitches where it shows how starting with 15 chains results in 8 single crochets with 7 spaces! At the start of the back panel it says to chain 75 (I’m making a small) and that you should have 38 sc and 37 chain 1 spaces, which equal 75, but what about the 3 chains used as the starting turning chain. So shouldn’t it be 78 chains to start (75 +3 turning chain), or 75 chains, with 36 sc and 35 chain 1 spaces?
